Taste the Difference is a cookbook for
those who are either allergic to wheat or are gluten intolerant.
Gluten intolerance is a serious health issue that can affect the
entire immune system, and can be difficult to manage. Unmanaged,
gluten intolerance can lead to increased risk of cancer, skin
disorders, and has been linked to schizophrenia.
After
having been diagnosed as gluten intolerant herself in 1994, JoDee
Vale began what would turn out to be years of research into gluten
intolerance and celiac
disease. It was during this
period that she started creating and compiling safe recipes for her
own use.

by friends and family to make her recipes public, JoDee has now
created "Taste the Difference" as a way for others to
safely enjoy the world of delicious and healthy wheat-free food.
JoDee Vale is a licensed massage therapist, performing many
modalities of massage, cranial sacral bodywork and reconnective
healing, and has been an holistic
health advocate since the early
80's.
JoDee currently lives, works and cooks in Northern
Arizona with her husband Mark, dog Sombra and cat Chesalon.
